When I heard this name for the first time, I smiled – cake Hairy fellow my friend often did it. When she let me try it, I just fell in love and knew I would bake them too.
This coconut flavor goes perfectly with coffee and tea, I like to serve Kudłacz to guests on special occasions. One of them is the upcoming Christmas. It will be on my table.
- 50 g coconut flakes,
- 160 ml coconut milk,
- 1 teaspoon of vanilla extract,
- 50 ml white rum,
- 250 g of soft butter,
- 300 g of powdered sugar,
- 4 eggs,
- 100 g of whole grain flour,
- 175 g of wheat flour,
- 2 teaspoons of baking powder.
Ingredients for the punch:
- juice from ½ orange,
- 25 ml of white rum.
Ingredients for the topping:
- 100 g of white chocolate,
- 100 ml whipping cream (30%),
- 50 g coconut flakes.
Additionally:
- 150 g jam, e.g. cherry jam.
Place 50 g of coconut flakes in a bowl. Boil the coconut milk in a pot and pour it into the bowl with the shavings. Once cool, combine with vanilla extract and rum. Set aside for an hour.
Cream the butter and sugar until light and fluffy. Without stopping mixing, add one egg to the mixture.
Mix the soaked coconut flakes (along with the liquid) into the mixture with a spatula.
Sift both flours and baking powder. Mix them into the mixture in batches. Mix briefly, just until the ingredients are combined.
Pour the dough into a 23 cm diameter baking tin lined with baking paper. Place in the oven preheated to 180°C. Bake for 30-40 minutes (until the stick is dry).
Cut the baked cake into 2 layers and sprinkle with orange juice mixed with rum. When the cake cools down, fill it with jam.
Heat the whipping cream in a pot and melt the crushed chocolate in it. Mix until a uniform icing is obtained. When it starts to set, pour it over the cake and sprinkle with coconut flakes. Cool in the refrigerator.
