Warming broth with meatballs is a nutritious soup, perfect for winter. It also serves as the main dish for the whole family and will surely please both big and small gourmets. You can prepare it in a very similar way to traditional broth, but this one is exceptionally meaty and expressive, with a strong note of ginger and chili in the meatballs. It will warm you up even on the coldest days.
To prepare the broth, you will need:
- 2 liters of water,
- 500 g of beef bones and a portion of chicken broth,
- 200 g of thread pasta,
- 2 carrots,
- 1 parsley root,
- ½ onion,
- ½ white part of the leek,
- 3 grains of allspice,
- 1 bay leaf,
- ½ teaspoon of salt,
- ½ teaspoon of black pepper,
- ½ teaspoon of ginger.
Ingredients for the meatballs:
- 300 g of minced pork and beef,
- 1 egg,
- 1 tablespoon of breadcrumbs,
- 1 clove of garlic,
- ½ teaspoon of oregano,
- ½ teaspoon of basil,
- 1 pinch of chili.
Opalize the onion in its shell over the fire.
Pour cold water over the meat. Cook for 2 hours, skimming off the scum. Then add vegetables and spices, excluding salt and ginger. Continue cooking for another 3 hours.
Prepare the meatballs. Combine all ingredients into a uniform mass. Form small balls the size of a walnut and set them aside.
Strain the broth through a fine strainer, preferably lined with cheesecloth. Bring the liquid to a boil again over low heat and add the meatballs one at a time. Cook them for 15-20 minutes until completely cooked.
Add the pasta strands and cook it according to the instructions on the package.
Season the soup with salt and ginger. Pour it into stock pots and serve hot.
Store the warming broth with meatballs in the refrigerator, covered. Use within 2-3 days.
