Delicate cheese mass and honey-rum poppy seeds wrapped in fluffy yeast dough is a dessert that will win the hearts and palates of your family this year. Ingredients for the cake:

  • 60 ml of milk (at 37°C),
  • 15 g of fresh yeast,
  • 200 g of wheat flour,
  • 1 egg + 2 yolks,
  • 60 g sugar,
  • 60 g of liquid butter,
  • 3 tablespoons of whipping cream (36%).

Ingredients for the cheese mass:

  • 220 g of ricotta cheese,
  • 40 g of powdered sugar,
  • 1 tablespoon of vanilla sugar,
  • 1 yolk,
  • 1 tablespoon of potato starch.

Ingredients for the poppy seed mass:

  • 250 g ground poppy seeds,
  • about ½ liter of milk,
  • 50 g of liquid butter,
  • 50 ml of liquid honey,
  • 100 g of powdered sugar,
  • 2 eggs + 1 egg white,
  • 25 ml of rum,
  • a pinch of salt.

Ingredients for the frosting:

  • 80 g of powdered sugar,
  • 1 tablespoon of lemon juice,
  • 1 tablespoon of water.

Prepare the yeast dough. Crumble the yeast and combine with a spoonful of sugar. Once the yeast has dissolved, combine it with the milk. Set the leaven aside for 15 minutes in a warm place.

Sift the flour through a sieve. Pour into a bowl. Add the leaven, egg and yolks and the rest of the sugar. Mix the ingredients with a mixer until you have a uniform dough. While mixing, gradually add butter and cream. When you obtain a smooth dough, cover the bowl with a cotton cloth and set aside in a warm place for an hour. During this time, the dough should at least double its volume.

Prepare the cheese mass. Blend the cheese with powdered sugar, vanilla sugar, yolk and starch.

Prepare the poppy seed mass. Pour the poppy seeds into the pot. Pour milk so that the poppy seeds are just below the surface. Boil the milk over low heat. Cook for about 20 minutes – until the poppy seeds have absorbed most of the milk. Strain the rest of the milk. Mix poppy seeds with butter and honey. Set aside to cool.

Separate the egg whites from the yolks. Beat the yolks with powdered sugar until fluffy. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Mix the egg yolk mixture into the poppy seed mixture. Add rum to it and finally mix in the egg white foam.

Assemble the roll. Roll out the risen dough into a rectangle. Spread the poppy seed mixture over its entire surface (with a narrow margin along the longer side). Place a roll of cheese mass along the longer side (opposite to the free margin). Roll the poppy seed cake into a roulade, sprinkle with flour, wrap in baking paper and set aside in a warm place for 20 minutes.

Place the poppy seed cake on a baking tray (on baking paper) and put it in the oven preheated to 150°C. Bake for about 60 minutes.

Combine the icing ingredients and spread it over the cooled poppy seed cake.
