Homemade icing is useful not only for decorating gingerbread cookies. It will also fit perfectly old Polish gingerbread, poppy seed cake, cheesecake, or apple pie. Apparently, icing began to be used to decorate baked goods in Poland at the beginning of the 18th century. Lovers of tradition are most likely to choose this to cover their baked goods royal icing, i.e. the one based on egg white and powdered sugar. It was used in the English royal court, hence its name. This icing is exceptionally white in color, which makes it look beautiful on baked goods. It contrasts especially well with delicacies with the addition of cocoa, which appear in Christmas recipes for gingerbread or gingerbread.

How to make royal icing? You will only need cups of powdered sugar and egg whitewhich must first be drunk to a fluffy, but not stiff, foam. Then gradually add the sifted powdered sugar and mix everything at low speed until a smooth, white mass is obtained. Before preparing the icing, do not forget to wash the eggs very thoroughly.

If you have children in your household, you can prepare colored icing, which they will surely be delighted with. This one in pink color you can easily obtain it by adding a small amount of raspberry or even beetroot juice to the mass, however purple created using blueberry or blackcurrant juice. Green color you will get, for example, a bit of matcha or spirulina, a yellow by adding turmeric. You can also add a few drops of ready-made food coloring.

An interesting combination that will allow you to achieve spiced icingwhich goes perfectly with Christmas baking is to add a pinch of cinnamon or gingerbread spice to the mixture. Chocolate flavor lovers can do this cocoa frostingadding half a teaspoon of raw cocoa to the icing.

Royal icing It’s great for baking, but not everyone can eat it. This applies primarily to allergy sufferers and people on a vegan diet. In this case, it’s worth doing icing based on water and lemon juice. It’s very simple. All you need is a glass of powdered sugar, three tablespoons of lemon juice, and about 6 tablespoons of water. Sift powdered sugar into a bowl, add lemon juice and mix constantly, gradually adding water until the icing becomes creamy. It is worth adjusting the amount of water to how thick you want the frosting to be. If you like tightly lemon flavoryou can skip adding water and replace it with lemon juice.

How to check Will the icing run off the gingerbread? To do this, scoop a little of the prepared mass onto a spoon and see how quickly it falls. If the icing is too thin, the easiest solution is to add more powdered sugar to the bowl with the icing.
