Not everyone has the time and inclination to make long-ripening gingerbread in advance. Especially for them, we invented a recipe for a quick cake that tastes as good as the traditional one. You can make them in a traditional version or in a “rich” version.
Ingredients for the cake:
- 2 cups of wheat flour;
- 3/4 cup of sugar;
- 2 eggs;
- 200 g buttermilk;
- 80 ml of oil;
- 3 tablespoons of liquid honey;
- 4 tablespoons of cocoa;
- 1 tablespoon;
- 1 teaspoon of baking soda.
Ingredients for the chocolate icing:
- 100 g milk chocolate bar;
- 2 tablespoons of butter.
Preparation:
To make a quick traditional gingerbread, first mix the dry ingredients in a bowli.e. flour, sugar, cocoa, baking soda and gingerbread spice. Place the wet ingredients in the second bowli.e. eggs, buttermilk, oil, honey.
In the next step, pour the wet ingredients into the dry ones and mix everything with a spatula. Pour the resulting dough into a baking tin previously lined with baking paper. Bake gingerbread in an oven preheated to 175 degrees for about 45 minutes, until the stick is dry.
When it cools down, cover it with chocolate icing. You will make it melting the milk chocolate with butter. It will start to set after just a few minutes – after that the cake will be ready to serve.
For a rich version of quick gingerbread, it is worth topping it with plum jam. In the store you will also find those with chocolate added, which will enhance its chocolate flavor. All you need to do is, after baking and cooling, cut the cake in half and fill it with fruit filling.
If you cover this cake with chocolate icing, you can additionally decorate it. Just sprinkle the gingerbread with nuts, almonds, cranberries or raisins. In the Christmas version, it will look great with sugar stars and candied, finely chopped orange peel.
