Sometimes a plate of soup is enough to make you feel better. This healthy carrot soup is just that, light, fragrant and yet nutritious. It is suitable for warming up after a long day and as a quick dinner, which will please not only the stomach, but also the taste buds.

Gentle, slightly sweet, yet with a distinct taste of carrot, which plays the main role here. “If you want the carrot soup to gain extra depth of flavor, try adding a small piece of apple or a pinch of nutmeg to it while cooking. The natural sweetness of the carrot will be beautifully enhanced and the soup’s aroma will be completely different,” advises chef David Šlapák.
Why is this soup healthy?
Carrots are full of beta-carotene, which turns into vitamin A in the body, supports vision and immunity. It also contains fiber, which aids digestion and makes the soup pleasantly filling. By adding semolina, you get a soup that is slightly thickened, nutritious and soft at the same time.
Carrot soup recipe
Raw materials:
- 500 g mrkve
- 2 tablespoons of butter or olive oil
- 2 tablespoons of semolina
- 2 tablespoons of oatmeal
- 1 l water
- salt to taste
- fresh parsley for sprinkling
Procedure:
Peel and coarsely grate the carrot. Melt the butter in a saucepan and briefly fry the carrots together with semolina and oatmeal. It only takes a few minutes for the carrots to release their aroma, not to roast them. Cover with cold water, add salt and bring to a boil. Simmer for about 15-20 minutes until the carrots are soft and the soup has thickened slightly. Blend the soup with a stick blender until smooth, or you can leave some pieces for texture. Finally, add chopped fresh parsley and mix.
This soup is like a hug for the stomach. Soft, warm and naturally sweet, you can prepare it quickly and it will please the whole family every time. You can serve it alone or with a piece of fresh bread.
If you want to give it a little freshness, try the variant with a drop of lemon juice or mild ginger, which will give the soup a new dimension of taste and support immunity.
