Rich omelette. Make it when you have no idea for breakfast or dinner

A rich omelette is the perfect way to have a hearty breakfast that will give you energy for the whole morning. In turn, if eaten in the evening, you will not feel like snacking at night. The secret to a good omelette is well-aerated eggs. What does this mean? It is worth beating them thoroughly to add air and make them really fluffy. They then need to be fried over medium heat, preferably covered. Thanks to this the omelette will be plump and soft. You can enrich it with your favorite additions, such as cheese, vegetables, ham or herbs. This dish is quick to prepare and tastes delicious in this savory version.

Ingredients:

  • 2 eggs, size L or XL,
  • 1/4 red pepper,
  • 5-6 cherry tomatoes,
  • 1/2 small onion,
  • medium mushroom,
  • 2 slices of zucchini,
  • 1/4 teaspoon of salt,
  • 1/4 teaspoon of black pepper,
  • a spoonful of butter.

Additionally:

  • parsley for serving,
  • chives for serving.

How to do it:

1. Finely chop the onion and cut the mushroom into thin slices or half-slices, depending on their size.

2. Heat the butter in a pan and add the onion. Fry it until slightly translucent for 1-2 minutes, then add the mushrooms. Fry everything together until excess liquid evaporates. Place the ingredients in a separate bowl, leaving as much fat as possible in the pan.

3. Cut the cherry tomatoes in half and chop the peppers finely.

4. In a separate bowl, beat the eggs thoroughly with a fork and add salt and pepper. The mass should be very foamy.

5. Pour the egg mixture into the pan with the heated butter and spread it evenly. When it starts to thicken but is still a bit raw on top, add all the vegetables.

6. Use a spatula to loosen the edges and cover it with a lid. Fry it for 1-2 minutes.

7. Place the rich omelette on a large plate. Serve hot, immediately after preparation, sprinkled with chopped parsley and chives.
