Poppy seed bastard It tastes best the day after preparation. Perfect for a mug of coffee, tea or cocoa. Be sure to prepare it for this year’s Christmas. The cake turns out so delicious that you definitely won’t end up with just one piece.
Before you start baking, prepare a suitable baking tray, we recommend it a form with dimensions of 25 × 30 cm.
Ingredients for shortcrust pastry:
- 400 g of wheat flour,
- 250 g of butter,
- 5 yolks,
- 1 teaspoon of baking powder,
- a bit of vanilla extract.
Ingredients for the poppy seed mass:
- 1 can of poppy seed mass,
- 1 protein,
- 1 teaspoon of vanilla sugar,
- 1 tablespoon of powdered sugar,
- a handful of dried fruits (raisins, orange peel, nuts),
- a pinch of salt.
First prepare the shortcrust pastry. Make them quickly, without adding too much air to the mixture. Pour flour and baking powder into a bowl. Stir lightly. Add cold butter cut into cubes and start kneading. While doing so, add the yolks and extract and quickly combine all the ingredients.
Divide the dough into two parts – one larger (for the base), the other smaller (for the crumble). Roll out the larger part or line the bottom of a tin of approx. 25 × 30 cm. Place in the fridge while preparing the poppy seed mixture. Cool the second part of the dough by wrapping it in foil.
Place the prepared poppy seed mixture into a bowl. Add vanilla sugar, powdered sugar and dried fruit. Beat the egg whites with salt until fluffy. Add to the remaining ingredients, mix until the ingredients are combined.
Place an even layer of poppy seed mixture on the cooled base. Sprinkle the top with the prepared crumble from the second part of the dough.
Bake at 180°C for about 35-40 minutes until the top is nicely browned. After baking, cool completely before slicing.
