If you like cheesecakes and are looking for a new, impressive recipe, this will be something for you. Crispy buttery base, two layers of delicate cottage cheese, creamy consistency – all this creates a perfect whole.
New Year’s Eve cake perfect for a family party, especially if you are organizing an elegant party. It tastes best when chilled, when all the flavors combine.
Crispy base:
- 200 g of wheat flour,
- 150 g of cold butter,
- 3 tablespoons of powdered sugar,
- 1 yolk.
Cheesecake layer:
- 1 kg of the cheese twalm,
- 200 g sugar,
- 4 eggs,
- 100 g of butter,
- 2 packages of vanilla pudding,
- 3 tablespoons of cocoa powder,
- 3 tablespoons of cream 36%.
Additionally:
- powdered sugar for sprinkling.
Prepare the shortcrust base. Place the flour and powdered sugar in a bowl, then add finely chopped cold butter and egg yolk. Knead everything into a smooth dough.
Wrap the dough in foil and place in the refrigerator for 30 minutes. Pour the mixture into the bottom of a 24×24 cm baking tin lined with baking paper.
Prick the bottom in many places with a fork, then put it in the oven preheated to 180 degrees Celsius and bake for 12-15 minutes.
Prepare the cheesecake layer. Melt the butter and cool. Loosen the cottage cheese with a mixer, then add all the remaining ingredients and mix until a uniform mass is obtained, without mixing for too long.
Divide the cheesecake mixture into two parts in a proportion of 1/3 to 2/3. Add cocoa to the smaller one and cream to the larger one. Mix both briefly, just until combined.
First pour the dark mixture onto the baked base, and then gently pour the light one. Put the cake in the oven preheated to 170 degrees Celsius for 60-75 minutes.
After baking, turn off the oven and open the door slightly. Cool the cake in the oven, and after at least an hour, bring it to room temperature and cool completely.
Place the New Year’s Eve cake in the fridge for at least 3-4 hours. Serve them cold, sprinkled with powdered sugar.
