The classic cake is prepared even several weeks in advance – it matures in the cold, acquires a deeper flavor of spices and becomes more and more moist. This express version is completely different – it does not require aging, it is made so quicklysuch as muffins or sweet breads, and then bake them immediately. The taste is less complex than in the case of classic baking, but still remains spicy. Without waiting, the gingerbread comes out soft and fragrant. It is an ideal solution for busy people who only find time to prepare Christmas Eve dishes on the evening of December 23. If you don’t want to come to your family empty-handed, try this proven recipe and bake a cake even at the last minute.

Ingredients:

  • 300 g of wheat flour (type 450),
  • 40 g gingerbread spice,
  • 20 g kakao,
  • 2 teaspoons of baking soda,
  • a pinch of salt,
  • egg (size L),
  • 150 g of fine sugar,
  • 500 ml buttermilk,
  • 125 ml sunflower oil,
  • 80 g of white chocolate,
  • 40 g butter.

How to do it:

1. Bring all ingredients to room temperature.

2. Pour loose products into a large bowl – flour, gingerbread spice, cocoa, baking soda and salt. Mix them thoroughly.

3. Crack the egg into another bowl and add sugar. Beat everything briefly with a whisk. Then add buttermilk and oil to the egg. Mix briefly again.

4. Pour the wet ingredients into the bowl with loose products. Mix everything briefly, just until it forms a uniform dough.

5. Pour the dough into a greased and floured 30 cm long cake tin. Place in the oven preheated to 180°C. Bake for about 45 minutes (until the stick is dry).

6. Remove the cake from the oven and set aside to cool completely.

7. Melt the crushed white chocolate with butter in a pot. Mix until a uniform icing is obtained. Decorate the gingerbread with it.
