One of the suggestions for serving this cake is a slightly varied form called “mosaic”. This cake is famous for its combination of classic baked cheese mass with cocoa inserts.

Thanks to this, the cheesecake not only gains a varied taste, but also… an interesting appearance that looks beautiful on the holiday table. When cut, it is extremely attractive and encourages even the pickiest eaters to eat it.

This is one of those cakes that always succeeds, so it is a good idea to prepare in this slightly stressful time full of rush and many tasks. Cheesecake for the holidays it can take the form of a mosaic, not only in appearance, but also in taste. Its preparation is not complicated and you can bake it the day before, then it tastes even better. To bake a mosaic cheesecake you need:

Ingredients for the cake:

  • 500 g of cake flour
  • 350 g of butter 1 cup of sugar
  • 2 teaspoons of baking powder
  • 3 eggs
  • 2 tablespoons of vanilla sugar
  • 3 tablespoons of cocoa
  • A pinch of salt

Ingredients for the cheese mass:

  • 1 kg of triple-ground cheese
  • 100 g melted and cooled butter
  • 1 and 1/3 cups of sugar
  • 2 tablespoons of vanilla sugar
  • 1 package of vanilla pudding
  • 5 eggs a pinch of salt

Preparation method:

Start by preparing the dough. Sift the flour onto the pastry board together with the baking powder. Add cold butter, sugar and salt. Chop everything with a knife, then add the eggs and knead the dough. Divide them into two equal parts. Add cocoa to one of them and knead again, for the ingredients to combine. Divide both parts into halves again to make a total of 4 pieces of dough. Wrap them in cling film and put in the fridge for about an hour.

Proceed to preparation of the cheese mass. Separate the egg whites from the yolks, add a pinch of salt and beat until stiff. Beat the yolks with regular sugar and vanilla sugar until fluffy. Place the triple-ground cheese and egg yolk foam in a large bowl. Mix until ingredients are combined. Add the cooled butter and continue mixing. Then add the pudding powder and finally the whipped egg whites. Mix everything with a wooden spoon.

Take one part of the dark dough and one part of the light dough onto a baking tray lined with parchment paper. Place patches of both doughs in the baking tray to form the bottom. Pour the cheese mass over it and arrange the dough again with white and black patches. Place the finished dough in an oven preheated to 180 degrees Celsius with the top-bottom function turned on. Bake for about 65 minutes, then leave the cheesecake for another 30 minutes in the turned off oven with the door ajar.
