Happy New Year Cake. It will be as he found it on New Year's Eve

Happy New Year Cake is a delicious, chocolate dessert that will surely make the next year sweet. You can bake them for a New Year’s Eve party or serve them to your family for afternoon tea on January 1st. It’s so tasty that every last crumb will disappear.

Before you start baking, prepare a suitable baking tray, it will work well form with a diameter of 22 cm.

Ingredients for the cake:

  • 200 g of wheat flour,
  • 300 g sugar,
  • 200 g cocoa powder,
  • 200 ml of hot coffee,
  • 100 ml rapeseed oil,
  • 2 eggs,
  • 1 teaspoon of baking powder,
  • 1 teaspoon of baking soda,
  • 1 teaspoon of salt.

Ingredients for the chocolate cream:

  • 600 g of powdered sugar,
  • 200 g of soft butter,
  • 150 g cocoa powder,
  • 100 ml whipping cream 36%,
  • 1 teaspoon of vanilla extract.

Ingredients for the topping:

  1. 200 g dark chocolate,
  2. 200 ml of whipping cream 36%.

Prepare the dough. In a large bowl, mix flour, cocoa, sugar, baking powder, baking soda and salt. In a separate bowl, mix eggs, buttermilk and oil.

Gradually add wet ingredients to dry ingredients. Finally, slowly pour in the hot coffee, stirring just until combined. The dough will be very runny.

Pour the dough into a 22 cm diameter cake tin lined with baking paper. Put the form in the oven preheated to 180 degrees Celsius and bake for 30-35 minutes, until the stick is dry.

Remove and cool the cake to room temperature, then cut it into three layers.

Prepare the cream. Beat the soft butter with a mixer until fluffy. Gradually add powdered sugar and cocoa, mixing until smooth. Pour in the cream and vanilla extract, then mix again.

Prepare the icing. Heat the cream in a small pot until approximately 60 degrees Celsius. Remove it from the heat and add the broken chocolate. Wait about 2 minutes and then mix intensively until you obtain a smooth glaze. Set aside to cool.

Assemble the dough. Spread ½ of the cream on the bottom bottom of the cake and cover with the second layer of cake. Spread the cream again and place the third layer. Pour the chocolate icing on top.

Put the Happy New Year cake in the fridge for about 2-3 hours to set all the layers. Serve them cold.
