Yellow cheese rolls are a great alternative to classic tortilla rolls or those wrapped in ham. They are light, effective and surprising simple to do. Yellow cheese without holes is best for them, but if you find slices with holes, it’s not a problem and you can “patch them” very easily. Just place thin slices of ham or lettuce leaves on the cheese – this will prevent the stuffing from falling out. You can add almost anything to such rolls – vegetable paste, meat and cold cuts, cottage cheese or sandwich cheese, finely chopped vegetables, fresh herbs and favorite spices. It’s a quick snack that you can prepare in just a few minutes (although it will need to spend some time in the fridge before you eat it so that it hardens and holds its shape). Guests will be delighted that instead of traditional rolls there is something different.
Ingredients:
- a dozen or so slices of yellow cheese.
Filling:
- 200 g of cottage cheese,
- 150 g surimi sticks,
- 20 g of butter lettuce,
- 2 eggs,
- red pepper,
- a handful of fresh parsley,
- 1/2 teaspoon of salt,
- 1/2 teaspoon of black pepper.
How to do it:
1. Hard-boil the eggs, peel them and chop them finely. Drain excess liquid from the cottage cheese and cut the surimi sticks into small cubes. Wash the red pepper, remove the seeds and chop very finely. Mix the ingredients together to create the filling and put it in the fridge.
2. After min. After 30 minutes, place the cheese slices on aluminum or food foil – so that each subsequent slice slightly overlaps the previous one.
3. Spread the filling evenly on top and cover with lettuce leaves (pressing lightly). Sprinkle with salt and pepper, add parsley. Roll everything up tightly and put it in the fridge for a few hours (preferably overnight) to harden.
4. The next day, remove from the refrigerator and foil, and then cut into 2-3 cm thick slices. Place on a plate.
5. You can fill the yellow cheese rolls with any fillings.
