Aromatic and juicy New Year’s Eve roast It’s a great idea to open the year culinary. You can prepare it with various types of meat, but beef that is not too fatty works best. Be sure to choose a nice cut of meat from a reliable source. It doesn’t take much to make a dish delicious. Just a few extras like thyme and rosemary. You can serve the finished dish with potato purée or Silesian dumplings. It will be delicious.
To prepare this recipe, you will need:
- about 1 kg of beef tenderloin,
- 100 ml of balsamic vinegar (red),
- 100 ml of olive oil,
- 3 cloves of garlic,
- 2 sprigs of rosemary,
- 6 sprigs of thyme,
- 1 teaspoon of freshly ground pepper,
- 1 teaspoon of salt.
Rinse and dry the beef, then remove any fibers and veins. You can tie the meat with kitchen string to give it a shape.
Pour olive oil and balsamic vinegar into a bowl. Add pressed garlic and finely chopped herbs. Mix the marinade.
Rub the marinade over the beef, place it in a glass or ceramic dish and wrap it with foil. Place in the refrigerator for 1-2 days.
Warm the beef before further processing. Sprinkle with salt and pepper.
Heat a frying pan with a non-stick bottom. Fry the beef briefly (30 seconds on each side). While frying, pour the marinade remaining in the meat container.
Place the beef in an ovenproof dish. Place in the oven preheated to 100°C. Bake for about 3.5-4 hours.
After removing from the oven, set the roast aside for half an hour. Later you can cut it into slices. Serve warm or cold.
