The bottom of the cheesecake is usually an addition whose role is primarily to provide the dessert with the right shape. Thanks to it, the curd mass does not burn on the bottom. However, a properly prepared and baked cake can become a tasty element of a dessert. That’s what he is cheesecake with a dark base – fragile, rich in cocoa, simply delicious. It’s nothing short of delicious royal cheesecakea classic Polish cake consisting of creamy cottage cheese mass and two layers of shortcrust cocoa cake (one on the bottom and the other, grated, on top).

Ingredients for the chocolate cake:
- 350 g of wheat flour,
- 200 g of butter,
- 100 g of powdered sugar,
- egg,
- 2 teaspoons of baking powder,
- 5 tablespoons of cocoa.
Ingredients for the cheese mass:
- 3 eggs,
- 150 g of fine sugar,
- a package of sugar-free vanilla pudding (40 g),
- 600 g cheese cheese,
- 150 ml of whipping cream.
How to do it:
1. Prepare the chocolate cake. Place all ingredients in the bowl of a planetary mixer (butter – cooled and cut into cubes). Blend with the hook attachment. The dough will be quite loose, so knead it with your hand at the end. Divide in a ratio of approximately 2:1 and chill in the refrigerator.
2. Place most of the chocolate dough on the bottom and sides of a 24 cm diameter cake tin. Prick the dough with a fork and cover with a properly cut sheet of baking paper. Fill the form with dry grains, e.g. beans. Place in the oven preheated to 180°C. Bake for 12 minutes. After this time, remove the weight and bake for another 5-7 minutes.
3. Prepare the cheese mass. Beat the eggs with sugar until fluffy. Combine it with vanilla pudding. In a separate bowl, mix the cottage cheese and cream. Combine with egg mixture.
4. Pour the cheese mixture onto the baked base. Tear the rest of the dough into smaller pieces (or grate them) and spread them evenly on the surface of the curd mass.
5. Place the cheesecake back in the oven. Bake for about 50 minutes. Cool in the oven with the door ajar. Place in a cool place.
