Flavors from years ago are increasingly coming back into favor and arouse sentiment, especially on the occasion of special meetings. New Year’s Eve is the perfect time to reach for proven inspirations that combine simplicity with a homely character. Old recipes can surprise not only with their taste, but also with the ingenuity of serving. Find out how to create a menu that will surprise and satisfy your guests.
Of course, vegetable salad was a must-have on the tables of the Polish People’s Republic. It existed in many different versions, but it was equally eagerly consumed in every home. To this day, it is a guest at many New Year’s Eve parties.
However, if we have had enough of it after the holidays and we want a breath of freshness, we can prepare it potato salad, which was equally popular at that time. It is easy to prepare and is based on easily available ingredients, i.e. potatoes, chives, parsley, onion and basic spices. It was often seasoned with lemon juice and vinegar.
There were also various forms available, including Rolmops. Another item on the New Year’s Eve menu in the Polish People’s Republic was, of course, legs in jelly. They were eagerly eaten with vinegar and lemon. In addition, hot bigos was often served, made from sauerkraut and fresh cabbage, as well as from dried mushrooms, onions, plums and spices, as well as from available meat.

If we want to surprise our guests with an unusual dish during the New Year’s Eve party, we can prepare it a real hit from the Polish People’s Republic, the so-called frog eyes. To make them we will need:
- good quality mortadella,
- 5-6 eggs or more, depending on the size of the mortadella,
- frying oil,
- egg for coating,
- breadcrumbs
- sun,
- pepper.
Preparing this snack is very simple. Cut the mortadella into slices and coat them in beaten egg and breadcrumbs. Sprinkle with salt and pepper and fry in hot oil until golden brown.
The fried mortadella slices will bend under the influence of heat, creating a cup-like shape. Crack one raw egg into these recesses and sprinkle with salt and pepper. Put them in the oven preheated to 180 degrees Celsius for a few minutes until the eggs are set. Finally, we can decorate our frog eyes with chopped chives.
