This simple lemon cake is sweet, moist and melts in your mouth. It is created extremely quickly, in just a few steps, and is an ideal baked product for various occasions – from birthdays and parties to unexpected guests or a quick afternoon coffee. Whole combines the light sourness of fruit and the sweetness of cakepleasantly refreshing and an attractive afternoon snack or second breakfast.

Ingredients:
- 300 g of all-purpose flour,
- 230 g of butter,
- 250 g sugar,
- 120 ml of milk,
- 4 eggs, size L or XL,
- 3 tablespoons of fresh lemon juice,
- a tablespoon of grated lemon peel,
- 1.5 teaspoons of baking powder,
- teaspoon of salt.
How to do it:
1. In a medium bowl, combine sifted flour, baking powder and salt.
2. In a large bowl or the bowl of a stand mixer, cream the butter on medium speed until light and fluffy, about 3 minutes. Gradually add sugar, stirring constantly, for about 2 minutes.
3. Stir in lemon juice and zest. Add the eggs one at a time, beating after each egg until combined.
4. With the mixer at low speed, add the sifted flour mixture in batches, alternating with the milk.
5. Line a 23×13 cm cake tin with baking paper or grease it with butter and sprinkle with breadcrumbs. Transfer the mixture to the form.
6. Place the cake in the oven preheated to 175 degrees Celsius and bake for 65-70 minutes until a skewer inserted into the cake comes out dry.
7. Remove the simple lemon cake and cool in the pan for 10 minutes, then transfer to a wire rack.
8. Serve the dessert on its own or with lemon icing. Store it in a tightly closed container at room temperature for 3-4 days.
