My guests always ask about this salad. The combination of herring, beetroot and eggs always works perfectly. This time I will prepare it for Epiphany, because my family is visiting me.
- 5 sheets of herring fillets in vinegar,
- 5 small beets,
- 5 eggs,
- 2 bunches of chives,
- optional: herring onion.
Sos:
- 6 tablespoons of mayonnaise,
- 3 tablespoons of cream 18%,
- 1 tablespoon of honey mustard,
- salt and pepper to taste.
Boil the beets whole, unpeeled, until soft. After cooling down, peel them and cut them into small cubes.
Hard boil the eggs, cool, peel and chop finely.
Drain the herring and cut it into smaller pieces. If you like, you can also add finely chopped herring onion.
Chop the chives finely.
Prepare the sauce by mixing mayonnaise, sour cream, mustard, salt and pepper.
Place chopped chives (leave some for decoration), herrings, half of the sauce, egg whites, cooked beets, half of the sauce and egg yolks on a plate. Salt everything. Sprinkle the top with cheese and decorate with chives.
