Plus the cake you will need a 20×30 cm baking tin. If you have a larger or smaller baking tray, remember to calculate the amount of products in the recipe, otherwise the chocolate marshmallow may be too thin or will not fit in the mold.

Ingredients:

  • 230 g of homogenized natural cheese,
  • 120 ml of cream 30%,
  • 4 egg whites,
  • 90 g sugar,
  • 1 tablespoon of cocoa,
  • 1 tablespoon of vanilla sugar,
  • 6 teaspoons of gelatin,
  • 6 tablespoons of water,
  • 20 biscuits,
  • 2 bars of dark chocolate.

Preparation method:

For starters line a baking tray with baking paper. Then place the biscuits on it – they should touch each other so that there is no free space. you can cut them in half to fit them better.

Then whip 60 ml of cream until stiff and add 115 g of cheese mixed with a spoon of cocoa. Gently combine the ingredients until you obtain a uniform mass.

Combine half of the gelatin (3 teaspoons) with three tablespoons of cold water. Wait a few minutes until it swells. Heat the gelatin in the microwave until it dissolves and mix thoroughly.

Beat two egg whites until stiff, then add 45 g of sugar and beat until the ingredients are combined. Add 2 tablespoons of beaten egg whites to the cooled gelatin and mix. Add gelatin to the remaining egg whites and mix. Next, add the cheese mass and cocoa to the bowl and mix until uniform. Pour the mixture into a baking tray and put it in the fridge.

Make the next layer of chocolate marshmallow in the same way as the first one, only for the cheese, instead of cocoa, add vanilla sugar. Pour the prepared mass onto the cooled cocoa layer and put it in the fridge until it hardens.

Pour chocolate over the cooled cake, melt 150 g in a water bath, cool for 2-3 minutes and pour over the marshmallow; you can additionally level it with a spoon. Grate the remaining 50 g of chocolate and sprinkle it on the cake immediately after pouring the icing. You can also decorate the marshmallow as you wish, including: mint leaves or your favorite fruit.
