Soft and light as down, simply delicious. I can eat this breakfast all the time

This is my favorite recipe for a family breakfast. Delicious, soft and light as down Cheesecakes with canned peaches they make every day instantly better.

  • 500 g of fatty cottage cheese.
  • 2 eggs.
  • 100 g of wheat flour.
  • 50 g of powdered sugar.
  • ¼ teaspoon of salt.
  • 1 canned peach half.

Additionally:

  • rapeseed oil for frying.

Drain the syrup from the peaches and dry them gently with a paper towel. Cut half of the fruit into small pieces and place them on a towel to absorb excess liquid.

In a large bowl, break the cottage cheese into small pieces with a fork, draining any excess liquid. Add the eggs and mix well.

Add half of the flour, sugar and salt to the cheese mixture. Mix everything with a fork, breaking up any lumps. Then add the peaches and mix everything gently again.

Heat the oil in a pan. Take a handful of dough from the curd mass and form a small, round and flat cake. Coat it in the remaining flour on both sides. Shake off the excess and place in the heated fat.

Fry the cheesecakes with canned peaches over medium heat for 4-5 minutes on each side, until nicely browned. When ready, place them on a plate lined with paper towels and leave to cool.

Store leftovers in the fridge and use within 2 days.
