Pancakes with mushrooms and cheese it’s an easy, relatively quick to prepare hot lunch or dinner. This recipe will make approximately 6 pancakes, i.e. a portion for 2-3 people. They also taste great the next day reheated in a pan.

To prepare pancakes, you will need:

  • 2 eggs,
  • 150 ml of milk,
  • 150 ml of water,
  • 160 g of wheat flour,
  • ½ teaspoon of salt,
  • clarified butter (for frying).

Ingredients for the stuffing:

  • 500 g mushrooms,
  • 1 onion,
  • 150 g of yellow cheese, e.g. cheddar,
  • ½ teaspoon of marjoram,
  • ½ teaspoon of thyme,
  • salt, pepper (to taste),
  • clarified butter (for frying).

Combine all ingredients for pancakes. Mix them (with a mixer at medium speed) into a uniform dough. Set aside for half an hour.

Cut the onion into cubes. Wash the mushrooms and cut into slices. Grate the cheese on the large holes of a grater.

Fry the onion in clarified butter. Add the mushrooms to the pan and fry until excess water evaporates. At the end of frying, add herbs to the pan. Season the mushrooms to taste with salt and pepper

Heat some clarified butter in a pancake pan. Measure out an incomplete tablespoon of the dough, pour it into the pan and spread it evenly, maneuvering the pan in your hand. Fry the pancake for less than a minute on each side. Fry the entire cake in this way.

Fill the fried pancakes with the stuffing from the pan mixed with grated cheese.

Fry the rolled pancakes in a pan with a small amount of clarified butter. Fry over low heat until the cheese in the pancakes melts and the filling is hot. Turn the pancakes over from time to time.
