Cottage cheese dumplings is a classic of Polish cuisine for carnival and Fat Thursday, which delights with its simplicity and unique taste. They are crispy on the outside, soft and fluffy on the inside, making them a perfect sweet treat for both children and adults. Cottage cheese makes them delicate and light, and the subtle aroma of vanilla makes them hard to resist. Oponki are prepared quickly and easily, using ingredients available on a daily basis, so they are perfect for both special occasions and everyday use.
To prepare this recipe, you will need:
- 250 g of semi-skimmed cottage cheese,
- 180 g of wheat flour,
- 2 eggs,
- 4 tablespoons of powdered sugar,
- 2 tablespoons of natural yogurt,
- 2 tablespoons of butter,
- 1.5 teaspoons of baking powder,
- 1 pack of vanilla sugar,
- 1 pinch of salt.
Additionally:
- butter to grease the form,
- powdered sugar for sprinkling.
Melt the butter in a pot and cool to room temperature.
In a bowl, beat the eggs with powdered sugar and vanilla sugar until light. Add ground cottage cheese, yogurt and melted butter. Mix everything thoroughly.
Sift the flour with baking powder and a pinch of salt. Add the dry ingredients to the wet ingredients and mix with a spoon or mixer at low speed until just combined. The mass should be thick and creamy.
Grease the cavities of the donut tin lightly with butter. Transfer the dough to a pastry bag and squeeze it into the mold, filling the cavities to about 3/4 of the height.
Bake the cottage cheese dumplings for 15-20 minutes at 180 degrees Celsius until they become golden in color.
After baking, remove the donuts from the pan and place them on a rack to cool. Sprinkle them generously with powdered sugar.
Store donuts in an airtight container and use within 2-3 days.
