Soft, delicate, perfectly elastic. Traditional donuts from an old recipe

Traditional donuts they must be soft and fluffy, richly stuffed with aromatic and delicious marmalade. This is the recipe I got from my grandmother and it has been my favorite for years.

The very moment of preparing and frying them inextricably reminds me of childhood and wonderful moments. My children also always look forward to these donuts. They are exceptionally light and elastic, melting in your mouth.

  • 260 g of wheat flour,
  • 100 ml of lukewarm milk,
  • 2 eggs, size L or XL,
  • 2 tablespoons of butter,
  • 2 tablespoons of sugar,
  • 1 teaspoon of vanilla extract,
  • 1 teaspoon of instant yeast,
  • ¼ teaspoon of salt.

Additionally:

  • lard for frying,
  • thick marmalade for filling,
  • powdered sugar for sprinkling.

In a medium bowl, combine eggs, milk, butter, sugar, salt and vanilla extract. Add yeast and mix well.

Pour the flour into the mixer bowl and pour in the egg mixture. Using a yeast dough hook, knead the mixture until the ingredients are combined. The dough will be ready when it starts to come away from the walls.

Place the dough on a work surface sprinkled with flour and knead for a few minutes. Place them in a greased bowl and cover with a linen cloth for a few hours until they double in volume.

Roll out the dough on a floured surface to a thickness of approximately 5 mm. Cut out circles with a glass or cookie cutter and place them on a baking tray lined with baking paper. Set the donuts aside to rise for about 30 minutes, until they double in size, loosely covered with a kitchen towel.

Heat the lard in a pot to a height of approx. 7-8 cm to 175 degrees Celsius. Fry 4-5 donuts at a time, without overfilling the dish. Fry them for 2-3 minutes on each side until golden brown.

Place the donuts on a plate lined with paper towels and leave to cool.

Transfer the marmalade to a pastry bag and stick the tip deep into the side of each donut. Fill them generously with jam.

Sprinkle traditional donuts with powdered sugar before serving.
