This light and colorful one salad with shrimp and avocado it’s a wealth of flavors, textures and nutrients. It is low in calories and full of valuable omega fatty acidsthat have a positive effect on the functioning of the immune, cardiovascular and nervous systems. It is ideal for people on a diet who care about their figure and physical condition. The whole thing is quite quick and easy to prepare. You just have to be careful not to overstretch the shrimp so that they don’t become dry and rubbery. It will work perfectly as a party snack for carnival or a light option for dinner or lunch.

To prepare this recipe, you will need:

  • 10 pieces of large shrimps,
  • 1 avocado,
  • ½ field cucumber,
  • 1 handful of arugula,
  • 50 g sera feta,
  • ½ teaspoon of salt,
  • ½ teaspoon of black pepper.

Ingredients for the dressing:

  1. 2 tablespoons of olive oil,
  2. 1 tablespoon of lemon juice.

Clean the shrimp and season with salt and pepper. Fry them in a pan with a little olive oil or grill them until they take on an intense pink color. Put them aside.

Cut the avocado in half, remove the seed and peel. Cut the flesh into equal pieces or slices.

Cut the cucumber into thick slices and then quarters.

Prepare the dressing by mixing olive oil and lemon juice.

Place the arugula on a large plate, then the cucumbers and avocado. Place the hot shrimp on top and sprinkle generously with crumbled feta cheese.

Pour the dressing over the salad with shrimps and avocado and sprinkle with black pepper, preferably freshly ground.

Serve the dish immediately after preparation, while the seafood is still warm and crispy.
