The most famous example of curled donuts are the so-called kkwaegipopular sweets originating from South Korea. These are yeast donuts formed into a braid, fried until golden and covered in sugar, often with cinnamon. They have a long tradition and are associated with home cooking and street food. Ingredients:
- 500 g of wheat flour,
- 250 ml of warm milk,
- 30 g of fresh yeast,
- 60 g of butter,
- 4 egg yolks,
- 3 tablespoons of sugar,
- a spoon of spirit or vinegar,
- a pinch of salt.
Additionally:
- frying oil,
- sugar for rolling.
How to do it:
1. Melt the butter and cool.
2. Dissolve the yeast, a tablespoon of sugar and two tablespoons of flour in half of the warm milk. Set aside in a warm place for 15 minutes until the solution starts working.
3. Sift the flour into a bowl, add the rest of the sugar, salt, egg yolks, the remaining milk and the risen leaven. Knead the dough, adding melted butter and spirit at the end. Knead until smooth and elastic.
4. Cover the dough with a kitchen towel and set aside in a warm place for about an hour or until it doubles in volume.
5. Divide the risen dough into equal parts, the size of a small egg, and then form each of them into a thin roll about 20 cm long.
6. Fold each roll in half and weave both ends together around each other to form a spiral. Pinch the ends together thoroughly. Place the spiral donuts on the counter and leave to rise for 15-20 minutes.
7. Heat the oil in a pot for deep frying. Put the twisted donuts into hot fat and fry them until golden on both sides at a temperature of 175 degrees Celsius.
8. Remove the finished donuts with a slotted spoon and place them briefly on paper towels. Roll in sugar while still hot. Leave to cool completely.
Serve the spiral donuts after they have cooled down. Store them in an airtight container and use within 2 days.
