Long-maturing meats they are a real gem of many cuisines around the world. Italians have their prosciutto crudo and salami, while Spaniards eat jamón serrano and chorizo. Not everyone knows that Polish cuisine also includes unique cold cuts kidzuki. Check, what kindziuk is made of, and whether this type of sausage is healthy.
Kindziuk is a long-maturing, hard pork meat. You can also find products with beef and game. It comes from Lithuania, where it was known as skilandis since the 16th century. Currently, it is produced, among others, in Podlasie and the Lublin region according to traditional recipes known for generations. It has characteristic, expressing, light acid flavor. The meat usually matures from several weeks to several months, sometimes even a year. You can also find smoked kindziuk in stores.
The basis for preparing perfect cold cuts is, of course, good quality meat. Kindziuk is made from porkwhich achieves its unique taste and aroma thanks to many hours of drinking marinating it in spices. The basics are of course salt and garlic, pepper or marjoram. Sometimes it is also added caraway seed. So prepared the meat is dried in appropriate conditionswhich lasts from two to four weeks, which allows you to achieve the desired consistency. The next step is fermentationwhich takes approximately three months. Finally, the kindziuk matures, gaining its final taste and aromawhich takes another few months.
Kindziuk is made from pork, which is why it contains: a large amount of protein, approx. 27 g per 100 g of product. The right amount of proteins in the diet is very important for health because they are the basic building blocks of all cells and tissues of the body. Consuming protein helps ensure proper functioning and regeneration of musclesas well as the condition of the skin, hair and nails. Moreover, protein is largely responsible for the satiety of meals, which is especially important when we want to reduce body weight. High-protein meals reduce the urge to snack. Additionally kindziuk contains B vitamins that support the functioning of the circulatory, nervous and muscular systems, as well as metabolic processes taking place in the body.
100 g of kindziuk contains approximately 250-300 kcaldepending on the manufacturer. Therefore, this meat should be eaten in moderation. This especially applies to people on a weight loss diet. This product is rather fatty and contains quite a lot of salt, that’s why it should not be eaten in large quantities by people who have high blood pressure or suffer from cardiovascular diseases.
You wonder what does kindziuk taste best with? Of course, a good quality product, it doesn’t need much. Enough a slice of fresh bread, preferably whole grain sourdough breadit will have more fiber. However, it is worth supplementing your meal with a portion of vegetables. It will work great for example arugula-based saladwhose distinctive taste goes well with the garlic-peppery cold cuts. You can add to it ripening cheese and a sweet addition of fruit, for example pears or figs.
How to store kindziuk? It is best to wrap it in paper to protect the meat from moisture, and store it in the refrigerator in a cool place. You can also place it in an airtight glass container.
