Avocado and egg salad it is a real feast for the palate and health. The combination of creamy avocado with a delicate egg, crunchy cucumber and juicy pepper makes each bite delight with freshness and richness of flavors. The yogurt sauce perfectly highlights the whole thing. This dish is not only delicious, but also… full of nutritional value – a source of healthy fats, protein and vitamins. Perfect as a nutritious breakfast, light lunch, or a colorful party snack. The salad is prepared from simple, commonly available ingredients. It looks impressive on the table, delighting both household members and guests. It is perfect for any occasion, quick to prepare and extremely versatile.

To prepare this recipe, you will need:

  • 1 avocado,
  • 4 eggs,
  • 1 medium cucumber,
  • 1 red pepper,
  • 4 tablespoons of Greek yogurt,
  • 1 clove of garlic,
  • 1 teaspoon of lemon juice,
  • ½ teaspoon of salt,
  • ½ teaspoon of black pepper.

Hard-boil the eggs, cool and peel them. Cut them into cubes of about 1 cm.

Cut the avocado and cucumber into cubes similar in size to the eggs. Also chop the pepper finely, removing the seeds. Put everything into a bowl.

Mix yogurt with lemon juice, pressed garlic, salt and pepper.

Gently mix everything with a spatula so that the ingredients are covered with the sauce but retain their shape.

You can serve this salad with your favorite bread.
