Kalaallit Kaagiat is served in Greenland during important celebrationsi.e. the birth of a child, graduation, etc. On the island, it was also called kaffemik. It comes out soft, fluffy and buttery with a hint of sweetness.
Kalaallit Kaagiat is a traditional yeast dough enriched with raisins, candied orange peel and cardamom. As a result, we get a baked product resembling or sweet bread.
What ingredients do we need to make Greenland yeast cake? Here is the exact list:
- 500 g of wheat flour;
- 250 ml of warm milk;
- 100 g melted butter;
- 100 g raisins;
- 50 g of candied orange peel;
- 50 g of sugar;
- 25 g of fresh yeast;
- 1 teaspoon of cardamom;
- a pinch of salt.
To make Greenland yeast dough, first add crushed yeast to a bowl. Add a tablespoon of sugar and flour and pour warm milk over everything. Mix everything, grinding the ingredients with a spoon. Set aside in a warm place for 15 minutes.
In the next step, pour flour, sugar, cardamom and salt into a separate bowl. Then add the yeast leaven, egg and melted butter. Knead the dough until it becomes uniform and elastic.
Then press the raisins and candied orange peel into the mass. Knead it for a while to combine the ingredients.
Cover the prepared dough with a cloth and set aside for 1.5 hours to rise. Then put them in a cake tin lined with baking paper. We can also form a round loaf on a baking tray.
Bake Kalaallit Kaagiat in an oven preheated to 180 degrees for about 40 minutes – until the top is golden brown. After cooling down, cut the cake into larger pieces and sprinkle it with powdered sugar or spread it with butter.
