Cold legs are a hit snack from the times of the Polish People’s Republic. The dish, most often served as an appetizer or snack, is in the form of jelly made from pork or beef legs. Very often it also contains cooked vegetables, such as carrots, celery or parsley. Spices add expressiveness here – including bay leaf and marjoram.

Making royally cold feet it’s not complicated. To prepare them you will need the following ingredients:

  • 350 grow goals;
  • 350 g pork legs;
  • 250 g pork ears;
  • 120 g of onion;
  • 120 g carrots;
  • 120 g parsley root;
  • 4 cloves of garlic;
  • 1 bay leaf;
  • 1 teaspoon of marjoram;
  • 2 teaspoons of salt;
  • ½ teaspoon of pepper;
  • 2 liters of water.

Preparation method:

  1. Clean the meat thoroughly and remove the bristles. In the case of pork shank, cut it along the longer side. Place the meat in the pot.
  2. We also add onion, carrot, parsley and garlic to the pot. We haven’t added any spices yet. Pour water over everything and bring to a boil.
  3. When the water starts to boil, pour it out, add fresh water and add the spices, omitting the salt for now. Bring to a boil and then set the burner power to minimum.
  4. We cook everything for about 3-4 hours. After this time, the meat should fall easily from the bones. At the end of cooking, add salt.
  5. After cooling down, use a strainer to strain the broth into a separate pot. We debone the meat and cut the vegetables into small cubes.
  6. We take deep bowls or special galley dishes. We put meat and vegetables in them. Then pour the previously poured broth over each portion. Cover the dishes and let the legs cool down.
  7. Once the legs have cooled down, put them in the fridge for about 6-8 hours. After this time, they should completely harden – then they are ready to eat.

Cold royal legs are usually served in company fresh bread. Homemade bread or dark wholemeal bread is perfect. It is worth mentioning that traditionally cold legumes are served with a small amount vinegar the lemon juice.
