Juicy roulade with plums and almonds it is a dish that combines many flavors and textures. It tastes great warm with the addition of boiled potatoes or puree. It is also perfect as a snack, appetizer or sandwich meat. You can also serve it to your guests on a charcuterie board.
To prepare this recipe, you will need:
- 1 kg turkey breast,
- 150 g of California dried plums,
- 50 g of almonds,
- 1 red onion,
- 2 tablespoons of honey mustard,
- 1 tablespoon of honey,
- 1 tablespoon of rapeseed oil,
- ½ teaspoon of marjoram,
- ½ teaspoon of rosemary,
- ¼ teaspoon of salt,
- ¼ teaspoon of black pepper.
Additionally:
- clarified butter for frying.
Wash the turkey breast, dry it and cut it into one large piece. Pound it with a pestle through the food foil to an even thickness of approximately 1.5 cm. Sprinkle with salt and pepper.
Finely chop the red onion and fry in a pan until translucent.
Cut the plums into smaller pieces. In a bowl, mix them with almonds and previously fried red onion.
Spread the inside of the meat thinly with honey mustard and sprinkle with herbs. Add the plum and almond filling, leaving a 2 cm margin at the edges. Roll the meat tightly into a roulade and tie it with meat twine.
Heat the clarified butter in a pan and fry the roulade on all sides until golden brown. Transfer the meat to an ovenproof dish and spread the top with honey mixed with oil. Put the whole thing in the oven preheated to 180 degrees Celsius and bake for 45-55 minutes, pouring the sauce from the bottom of the roulade from time to time.
Remove the plum and almond roulade and wait 10 minutes before removing the string and cutting it. Serve the slices warm or after they have cooled completely, preferably with vegetables or horseradish.
