Ground like grandma’s this dish is perfect for a family dinner. One of the best meats for minced cutlets is, of course pork should be quite fatty, so choose shoulder or neck in the store. If you can, grind the meat yourself at home. Another important ingredient is bread soaked in milk, which makes the cutlets more tender and juicy. Whereas onion and garlic fried in a pan they will give the dish a unique aroma. You can only use salt and pepper to season the cutletsbut they will taste just as good or even better with a little bit marjoram and sweet pepper. Fry the minced cutlets in fat that has a high smoke point, it can be lard or clarified butter.
To prepare this recipe, you will need:
- 500 g of minced pork (e.g. neck or shoulder),
- 1 onion,
- 1 clove of garlic,
- half a teaspoon of marjoram,
- half a teaspoon of ground sweet pepper,
- salt and pepper to taste,
- 1 egg,
- 1 kaiser roll,
- 200 ml of milk,
- breadcrumbs for rolling,
- lard for frying.
Ready-made cutlets taste best with boiled potatoes, you can also choose puree, and homemade beetroot salad.
Soak the breadcrumbs in milk. Meanwhile, place the meat in a bowl.
Grate the onion and garlic. Fry them in a little fat in a pan and add to the meat.
Drain the milk from the bread roll and put it in a bowl.
Add marjoram, ground sweet pepper, season with salt and pepper.
Form cutlets with wet hands. Roll in breadcrumbs.
Fry in hot lard on both sides for a few minutes. They should have a golden skin.
