Pumpkin it is associated primarily with autumn. However, it also works great in winter recipes. Not everyone knows that it can be used to prepare tasty cakes. The sweet vegetable goes perfectly with spices, cinnamon, nutmeg, and ginger. The spicy base goes perfectly with the apple filling and crunchy crumble.
Before you start baking, prepare a suitable baking tray. A cake tin with a diameter of 26 cm will work well.
Ingredients for pumpkin cake:
- 250 sind, t. rights,
- 100 g of creamy salted cheese,
- 125 g of soft butter,
- 100 g cane sugar,
- 340 g of condensed milk (small can),
- 1 egg,
- 225 g of wheat flour,
- ½ teaspoon of cinnamon,
- ¼ teaspoon of ginger,
- ¼ teaspoon of nutmeg,
- 1 teaspoon of baking powder,
- ¼ teaspoon of salt.
Ingredients for the apple mass:
- 4 sour apples,
- 1 tablespoon of cane sugar,
- 1 teaspoon of cinnamon.
Ingredients for the crumble:
- 150 g of flour,
- 110 g of cold butter,
- 75 g of sugar.
Prepare the crumble. Place all the ingredients in a bowl (butter cut into cubes) and – rubbing with your fingers – combine into a lumpy dough. Place them in the fridge while you prepare further.
Prepare the apples. Peel them and remove the seeds. Cut the flesh into small pieces. Fry in a pan with sugar until the apples fall apart and excess juice evaporates. Mix cinnamon into the apples.
Prepare the pumpkin cake. Measure 250 g of pumpkin and grate the pulp using a coarse grater. Use the rest of the pumpkin for other purposes. Mix the cheese with butter and cane sugar. Add condensed milk and mix again until combined. Beat the egg into the mixture and add the pumpkin. Mix everything with a spatula. Then mix the sifted flour with spices, baking powder and salt into the resulting mass.
Line the cake tin with baking paper. Pour the pumpkin dough into it and spread it evenly. Spread a layer of apples on the dough and sprinkle the crumble on top of the apples. Put the cake in the oven preheated to 180°C. Bake for about 45 minutes.
