Old Polish weddings were rich in various dishes, the tables were full of delicious dishes, especially if the occasion concerned noble families. Many of these recipes have survived to this day in a slightly refreshed form. One of them is perfect for – this soup was served by the Zamoyski family. See how to prepare it.
The recipe for this soup is 100 years old. The first mention of landscape cake in Lublin appeared in 1926 on the menu served during a wedding in Kozłówka. It was in this town that on September 12, 1926, Michał (brother of the last owner of Kozłówka) and Maria Zamoyski got married. The “Wedding Reception Menu”, currently in the archives of the Museum in Kozłówka, shows a landscape cake served to the guests. However, not only the nobility appreciated the taste of this soup. This dish was also popular among peasants. Housewives often cooked it for their families – especially for men working in the fields. Thanks to this, the landscape combines landowner and peasant traditions.
What made so many people love her? First of all, unique taste and aroma. A landscape painting is a type that, depending on the season, was enriched with various additions. The soup was made from meat. Fried vegetables were added to the brothamong others kohlrabi, carrots, onion, garlic, celery and potatoes (although it depended on the wealth of the house and the availability of ingredients). Ingredients:
- 2 liters of water,
- 4 carrots,
- parsley,
- celery stalk,
- by,
- onion,
- large zucchini,
- 2 cloves of garlic,
- 4 potatoes,
- 4 smaller turnips,
- 150 g smoked bacon,
- 100 g canned white beans,
- a spoonful of butter,
- salt and pepper to taste.
Preparation method:
Peel the potatoes, celery, parsley, carrots and turnips, then cut them into medium cubes.. Chop the onion into small cubes and the leek into thin strips. Press the garlic through a press – if you don’t have one, you can grate it on a fine grater. Cut the bacon into small cubes. Prepare a larger pan and melt the butter in it. Fry the onion and garlic, then add the bacon. Fry for a while and add the remaining vegetables. Fry for a few minutes until the meat is browned.
After frying the vegetables and meat, put them in a pot. Then add water and spices. Cook everything for about 30-40 minutes over low heat. At the end, add the beans and cook for another 10 minutes. After this time, the landscape will be ready. You can serve it with bread and decorate with fresh parsley.
