Champignons are cultivated mushrooms available in almost every store regardless of the season. They can constitute base for mushroom sauceespecially if you have already depleted your supplies of dried or frozen porcini mushrooms or boletus mushrooms. They will fit perfectly here onion and garlic fried in butter, as well as the addition of thyme, and a special ingredient that enhances the taste, i.e. dark soy sauce. You can also add a few dried wild mushrooms, they will enhance the taste of the dish. In such company, chicken fillets will taste delicious. If you don’t know what to cook for dinner today, try this recipe for chicken in mushroom sauce.
To prepare this recipe, you will need:
- 500 g chicken fillet,
- 200 g mushrooms,
- a few dried wild mushrooms (optional),
- 1 small onion,
- 2 cloves of garlic,
- 250 ml broth,
- 100 ml of sweet cream (18%),
- 2 teaspoons of chicken seasoning,
- 1 teaspoon of thyme,
- 1 tablespoon of chopped parsley,
- salt, pepper, dark soy sauce (to taste),
- clarified butter (for frying),
- flour (for coating the meat).
Wash the chicken fillet, remove the membranes, cartilage, etc. Cut the meat into smaller pieces. Sprinkle them with chicken seasoning and then dredge them in flour.
Heat a small amount of clarified butter in a pan. Fry the chicken pieces in it – so that the meat is brown on each side. Remove the chicken from the pan.
Peel the onion and cut into cubes. Chop the garlic finely.
Wash the mushrooms and cut into slices. Also wash and cut the wild mushrooms (peel them first if they require it). If you use dried ones, soak them.
Heat the clarified butter in a pan. Fry the onion in it. At the end of frying, add garlic, and after a while add mushrooms and wild mushrooms. Fry until excess water evaporates. At the end of frying, add salt.
Place the meat in the pan. Pour hot broth over everything. Cover and simmer over low heat for about 20 minutes. At the end, add herbs to the pan. Season everything with pepper and dark soy sauce.
Pour sweet cream into the pot. Stew the chicken in the mushroom sauce for a few more minutes.
