This dessert will immediately appeal to those who cannot decide whether they love apple cakes or cheesecakes more. The cake combines the best features of both of these classics. The basis is shortcrust, buttery doughwhich holds its form well and constitutes a base for subsequent layers. They still appear on it juicy apples seasoned with sugar and spices, so the whole thing smells of cinnamon and vanilla. This fruity layer, although distinct in taste, does not dominate. Its natural acidity balances it perfectly creamy cheese mass. The dessert features a delicate and smooth cheesecake, adding more velvety and lightness. This is a perfect bake for family gatherings, holidays and weekend afternoons. Apple pie with cheese filling proves that sometimes combining two traditional cakes gives a delicious result.
Ingredients:
Cake:
- 500 g krupczatka flour,
- 250 g of butter,
- 100 g sugar,
- a pinch of salt,
- package of vanilla sugar.
Apple layer:
- 4 large apples,
- half a teaspoon of apple pie spice,
- 2 tablespoons of brown sugar.
Cheese mass:
- 250 g of semi-skimmed cottage cheese,
- 100 g sugar,
- 2 proteins,
- a pinch of salt,
- a bit of vanilla extract.
Additionally:
- powdered sugar for sprinkling.
How to do it:
1. Prepare the dough. Sift the flour into a bowl, add sugar, vanilla sugar, salt and cold butter cut into pieces. Knead the shortcrust pastry quickly. When the ingredients are combined, divide the dough into two parts – larger (approx. 2/3) and smaller (1/3). Put them in the fridge for 30 minutes.
2. Roll out most of the dough and place it in a baking tray lined with baking paper (approx. 25 × 30 cm). Prick the bottom with a fork and bake in an oven preheated to 180°C for 15 minutes.
3. Meanwhile, peel the apples, remove the seeds and cut them into thin slices. Mix with brown sugar and apple pie spice. Set aside for a few minutes.
4. Mix the cottage cheese with sugar and vanilla extract until smooth. You can use a mixer or blender for this. In a separate bowl, beat the egg whites with a pinch of salt until stiff and gently fold them into the cheese mass, preferably with a spatula.
5. Place an even layer of apples on the baked base. Then spread the cheese mixture and grate the rest of the cooled dough on top.
6. Put in the oven and bake for 40-45 minutes at 180°C.
7. After cooling, sprinkle with powdered sugar.
