Cheese and onion soup it is fragrant, velvety, and tastes best with crusty bread. Apart from the onion, you will only need a few ingredients that you most likely already have in the fridge, so there will be no additional purchases. The onion flavor is enhanced by butter, nutmeg and thyme. It will work best here be cheddarbut you can also use Gouda or Italian Parmesan. The recipe is very simple, even a culinary novice can make it.
To prepare this recipe, you will need:
- 1 liter of vegetable broth,
- 500 g of onion,
- 2 large cloves of garlic,
- 60 g of butter,
- a pinch of nutmeg,
- salt and freshly ground black pepper to taste,
- a few sprigs of fresh thyme,
- 50 g of cheddar cheese or other yellow cheese.
Peel the onion and cut into slices. Chop the garlic finely. Melt the butter in a pot. Add the onion and garlic, fry over low heat for a few minutes. Add salt while doing so. Stir frequently until the onion is soft and slightly golden.
Pour in the vegetable broth, stir and bring to a boil. Add fresh thyme, a pinch of nutmeg, salt and freshly ground pepper. Cook over low heat for another 15 minutes to combine the flavors.
Finally, add cheddar cheese to the soup. Continue heating until it melts.
