Chicken with broccoli it is juicy and tender meat that melts in your mouth. The company of tender and slightly crunchy broccoli florets makes the dish not boring and combines many flavors and textures.
Rosemary pleasantly highlights the aroma and adds depth, freshness and herbalness to the dish. Chicken prepared this way is a perfect idea for a family lunch or a romantic dinner for two. Try it once and it will certainly appear on your table often.
- 4 chicken drumsticks,
- 2 heads of broccoli,
- a few cherry tomatoes (optional),
- 4 sprigs of rosemary,
- 3 tablespoons of olive oil,
- 2 tablespoons of soy sauce,
- 2 cloves of garlic,
- 1 teaspoon of salt,
- 1 teaspoon of pepper,
- ½ teaspoon of hot pepper.
Wash the meat and dry it with paper towels. Wash the broccoli and divide it into smaller florets.
In a bowl, mix together: 2 tablespoons of olive oil, soy sauce, finely chopped garlic, half of the salt, half of the pepper and hot pepper.
Place the chicken drumsticks in the marinade and rub the meat thoroughly with it. Set them aside for at least 30 minutes.
Preheat the oven to 200°C. Grease a large ovenproof dish with olive oil. Place the chicken thighs on a baking tray and bake for 20 minutes.
In a bowl, toss the broccoli with 1 tablespoon of olive oil and the remaining salt and pepper. You can also add a few cherry tomatoes. Add the vegetables to the dish with the chicken, arranging the florets around them. Insert the rosemary sprigs between the chicken pieces.
Bake everything together for another 20-25 minutes until the chicken is well cooked and the broccoli is tender.
Remove the chicken and broccoli from the oven and serve hot with potatoes or rice.
