Moroccan cuisine is usually associated with spicy dishes full of aromatic spices. The menu there also has something for sweets lovers. Baghrir, also known as “million hole” pancakes is a dish that you can serve for a sweet breakfast or, Moroccan-style, as an afternoon snack with afternoon tea.

How do baghrir differ from our classic pancakes? Although both dishes are thin pancakes, there are many differences between them and not only the characteristic holes. The recipe for a Polish pancake contains, of course, white wheat flour, usually type 450 or 500, milk and eggs. To give them the perfect consistency, carbonated water is often added.

Moroccan pancakes are prepared with semolins, the coarsemassed buckets received from the hard wheat duur. They do not contain eggs, but they are added yeast. They are served both for breakfast and as a dessert. Popular ones additions to pancakes with holes include butter, honey, you can also serve them with fruit jam. Baghrir are usually smaller than our traditional pancakes. When preparing them, add small portions of dough to create bubbles and then holes. The method of frying is also an important difference, No fat should be used for Moroccan pancakes. Additionally, this should only be done on one side.

To prepare this recipe, you will need:

  • 400 g fine semolina,

  • 15 g of wheat flour,

  • 600 ml of lukewarm water,

  • 1 full teaspoon of sugar,

  • a decent pinch of salt,

  • approx. 10 g of dried yeast,

  • a flat teaspoon of baking powder.

Preparation:

  1. Pour semolina, wheat flour, dry yeast, sugar and salt into a bowl. Also add water and mix everything for a few minutes at medium speed.
  2. Add baking powder and continue mixing until foam forms on the surface.
  3. Pour a small portion of the dough into a well-heated frying pan with a non-stick coating.
  4. Fry for about two minutes, only on one side.
  5. Place the finished pancake on a cotton towel and wait until it cools down and evaporates.

Serve ready pancakes with holes with butter and honey. You can also serve them with your favorite jam, jam, powdered sugar or fresh fruit. They will also taste delicious.
