Lemkos is an ethnic minority living in the Lemko region (areas located in the Low Beskids and parts of the Sądecki Beskids and the western Bieszczady Mountains). The traditional cuisine of this people suits the tastes of many gourmets. It is particularly worth attention ciurka – Lemko soup.

Recipe for traditional Lemko ciurka it’s not complicated. The oldest housewives in the Bieszczady Mountains still remember him. The key is to buy good quality ones ingredients. Dairy is particularly important (cream and white cheese) i herbs – if we have a choice, it is best to choose fresh leaves, but as a last resort, dried ones will also work. Here is the full list of essential products:

  • about 2 liters of beef or lamb bone broth (you can replace it with regular vegetable broth);
  • 3 onions;
  • 150 g of semi-skimmed cottage cheese;
  • 200 ml of sour cream;
  • a piece of bread roll (optional);
  • a few lemon balm leaves (or 1-2 teaspoons of dried);
  • a few nettle leaves (or 1-2 teaspoons of dried);
  • 2 tablespoons of wheat flour;
  • 3 tablespoons of butter;
  • salt and pepper.

Preparation method:

  1. Peel the onions and cut them into small cubes. Fry it in butter, and when it turns glassy, ​​add 2 tablespoons of wheat flour. Mix everything until golden brown, then pour into the hot broth.
  2. Mix the cottage cheese with sour cream. Add a few tablespoons of hot broth to the resulting mass, mix everything, and then pour into the soup. Mix everything, also adding salt and pepper. Cook over low heat for 5-10 minutes.
  3. Add nettle and lemon balm to the mixture. If we like thicker soups, we can add some crumbled bread. Finally, we try and, if necessary, season the dish.

Ciurka that’s extremely aromatic i nutritious dish. What’s more, we can slightly modify them and thus adapt them to our own taste. Nothing stops you from sprinkling the soup with hard rennet cheese or adding parsley. However, it must be admitted that the traditional version of ciurka also tastes delicious.
