Do you like to start the day with something sweet, but want to avoid unhealthy solutions? There is a way – granola for a healthy breakfast it will work great. I have been using this recipe for a long time, which provides lots of vitamins and minerals.
Oat flakes can reduce the level of “bad” LDL cholesterol, and thanks to the fiber content, they also support weight control. On the other hand Medjool dates it is a healthy source of natural sweetness, as well as potassium and magnesium. They have a low glycemic index and contain a lot of fiber.
Nuts and seeds – including almonds and pumpkin seeds – are a combination of protein and healthy fats. Importantly, they also contain vitamin E, which supports skin and eye health and helps reduce inflammation. Almond butter is also important – together with whole almonds, it promotes the formation of a short-chain fatty acid, butyrate, in the large intestine. It is a postbiotic that supports gut health and nourishes good bacteria.
Do you want to prepare a delicious breakfast addition yourself? Here’s what you need ingredients for homemade granola:
- 2 cups of mountain oatmeal
- ½ cup of almond flakes
- ¼ cup unsalted pumpkin seeds
- 6 Medjool dates, seedless (approx. ⅓ cup after pounding)
- ¼ cup melted coconut oil
- ¼ cup unsweetened almond butter
- 1 teaspoon of vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon of ground ginger
- ¼ teaspoon of salt,
- 1 large egg white.
Preheat the oven to 165 degrees Celsius. Prepare a large bowl and combine oatmeal, almonds and pumpkin seeds.
Using a food processor, blend the dates, coconut oil, almond butter, vanilla, cinnamon, ginger, and salt until smooth.
In another bowl, beat the egg white until stiff.
Pour the date mixture over the oat mixture and mix thoroughly until thoroughly combined. Add the foamed egg white and mix again.
Spread the granola evenly on a large baking tray lined with baking paper.
Bake for about 25 minutes until the granola is slightly golden, intensely fragrant and dry to the touch. Stir lightly after 15 minutes of baking.
Leave the granola on the baking sheet to cool completely – about 30 minutes.
