Scrambled eggs with pork brain – some are repulsed by the very thought, others appreciate its taste and health benefits. Check out the properties of pork brain and maybe you will also prepare this somewhat forgotten, but still tasty and healthy dish.
Pork cerebellum It has been a valuable and appreciated product for years, although recently it has not been very popular. It is considered a culinary proposition for connoisseurs, because its preparation requires appropriate knowledge and delicate seasoning and thermal processing. It is extremely filling, so even a small portion can satisfy your hunger.
The question arises – whether is pork cerebellum healthy? It should be noted that it is a good source of protein, vitamin B12, vitamin B3 and phosphorus. Thanks to this, this product can support, among others: proper functioning of the nervous system and healthy skin.
Ingredients:
- 200 g of pork brain,
- 4 eggs,
- a spoonful of butter,
- a spoon of milk,
- salt and pepper
- optional onion and tomato or pepper,
- optional: chives or parsley for decoration.
Start by soaking the cerebellum in water for about half an hour.
Then cleanse it by removing the membranes and remnants of blood vessels.
Now it’s time to blanch – pour water into the pot, add a pinch of salt and bring to a boil.
Add the cerebellum after cleaning and blanch for 3 minutes. Then take it out and let it cool. Cut into smaller pieces.
Heat a pan and melt the butter in it. Optionally, you can also fry diced onion and tomato or pepper, some people also add a bit of corn. Add the cerebellum, fry for about 3-4 minutes, stirring gently.
In a separate bowl, mix the beaten eggs with a spoonful of milk, add a bit of salt and pepper to taste.
Pour the eggs into the pan with the brain. Fry everything over low heat, stirring until the eggs are set. If you want, decorate the scrambled eggs with chopped chives before serving.
Pork brain is an ingredient that is best eaten in the simplest form possible – this way we will extract the maximum flavor from it. It also does not like drying out, too much spices is also not a way to prepare it properly.
