Potato babka is a true classic of Polish cuisine from the times of the Polish People’s Republic, which was forgotten for some time. However, it is worth returning to it because it has a lot to offer.

Homemade potato cake is a simple, filling and exceptionally tasty dish, prepared from easily available ingredients. In the times of the Polish People’s Republic, it regularly appeared on tables in almost every home. Today it is less common and served every day mainly in Podlasie, although it undoubtedly deserves more popularity.

It is a great idea for dinner or another hot meal that can be easily prepared to satisfy the whole family. Potato cake is made from grated potatoes , enriching the mass with additions such as bacon or onion. Just bake everything in the oven and it’s ready.

The dish does not require special culinary skillsso that it turns out incredibly aromatic and tasty. Before you start preparations, however, it is worth paying attention to several important issues. Choosing the right potatoes is crucial. Flourish potatoes work best. Well-prepared scraps and spices are also important.

Potato cake, although it does not look as impressive as a top-class restaurant dishdelights with its taste, satiety and preparation. In addition, it reminds us of the flavors of childhood and the cuisine of the Polish People’s Republic for many people it can be a sentimental journey.

To prepare the potato cake you will need the following ingredients:

  • 900 g raw potatoes
  • 100 g of boiled potatoes
  • 1 egg
  • 200 g skwarek
  • 1 onion
  • 100 carrots
  • 3-4 cloves of garlic
  • 2 tablespoons of marjoram
  • 1 tablespoon of herbal pepper
  • Salt and pepper

Preparation method:

  1. Peel the onion and garlic and peel the carrot. Grate the vegetables finely. Grate raw and peeled potatoes as finely as possible in a blender, food processor or grater.
  2. Add the cooked potatoes to the resulting mass (also grated) and other vegetables. Beat the egg and add all the spices. Mix everything until a uniform mass is obtained. Finally, add the cooled cracklings and mix again.
  3. Line cake tins or other heat-resistant dishes with paper or grease them with lard. Pour out the resulting mass. Bake the babka in an oven preheated to 180 degrees C with convection for 50-60 minutes.
  4. The finished potato cake should be crispy on top and soft on the inside. Cut it into portions and serve when it has cooled slightly. Serve warm alone or with additions such as parsley, dill, home-made cucumbers or salad. Enjoy your meal!
