Soft, delicate and quick to make mini donuts. No yeast and no rising. They are perfect for afternoon coffee, not only on Fat Thursday. You can also serve them with vanilla sugar, cinnamon or chocolate icing.
To prepare this recipe, you will need:
- 320 g of wheat flour type 450,
- 500 g of natural cheese (homogenized or very smooth),
- 4 eggs,
- 400 g sugar,
- 1 tablespoon of vodka,
- 3 tablespoons of natural Greek yogurt,
- 1 teaspoon of baking powder,
- 1 teaspoon of baking soda,
- frying oil,
- powdered sugar for sprinkling.
Mix the eggs with sugar until light and fluffy. Add the cheese and vodka and mix briefly again. Then add yogurt and mix thoroughly.
In a separate bowl, combine the flour, baking powder and soda.
Pour the dry ingredients into the mixture and mix. The dough will be quite thick and slightly sticky.
Heat the oil in a pot or deep frying pan. It should be well hot but not smoking.
Scoop the dough with an ice cream scoop previously dipped in hot oil. You can also form small balls with your hands moistened with water.
Drop the mini donuts into the heated fat and fry for a few minutes on each side until they are nicely golden. Do not fry more than 3-4 pieces at a time so that the oil does not lose temperature.
Remove the fried donuts with a slotted spoon and place them on a paper towel. When they cool down slightly, sprinkle them generously with powdered sugar.
