It’s hard to imagine a daily diet without bread, however more and more people are looking for ways to give this everyday delicacy a new, slightly more interesting character. As it turns out, all you need to do is add a spice that is usually associated with sweet baked goods to start surprising with a unique flavor note.
If you want to experiment in the kitchen and at the same time find your favorite bread recipe, definitely try this one with cinnamon. Although it sounds quite surprising, since I bake it at home, the bread disappears from the plate before it has time to cool down.. When combined with jam or sweet spreads, it has a finger-licking taste.
Cinnamon is usually associated with sweet baked goods, such as cinnamon rolls or cookies. It turns out that it can also be a great addition when baking bread, giving it a unique aroma and delicate sweetness without the need to add sugar.
Thus, it gains a more expressive taste, as well slightly warming character, so it’s perfect for cold days. It is an interesting alternative to classic bread, especially loved by the youngest. The taste of such bread is subtly sweet, spicy and perfectly harmonious.
Cinnamon does not dominate, but highlights the natural flavor of the flour and sourdough. For many people, it tastes best fresh without any additives, but this type of bread offers a lot of possibilities. It tastes amazing with butter or peanut butter, honey, jam, cream cheese, chocolate cream, banana or apple. It is also a good base for sweet toast.

Thanks to its specificity Cinnamon bread is perfect for breakfast, an afternoon snack, or a healthy snack. I baked this bread once and I absolutely fell in love with it. And not only me, but my entire family, because he stole the hearts of both adults and children. It diversifies the daily diet and cleverly helps reduce the craving for sweets.
If you want to bake such homemade bread with cinnamon, you need the following ingredients:
- 260 ml of water
- 1 teaspoon of cinnamon
- 225 g of whole grain flour
- 150 g of wheat bread flour
- 120 g
- A pinch of salt (approx. 8 g)
- Optional: a bit of honey if you want a more noticeable note of sweetness
Preparation method:
- Start with the leaven, making sure it is active. It should be clearly aerated and double in volume, so that it is at the peak of activity when mixing the dough, which is usually after 4-6 hours.
- When it is ready, you can start kneading the dough. Add water to the active leaven, add both flours and knead briefly. Set aside covered for about 20 minutes to allow the ingredients to combine well. Then add a pinch of salt and knead the dough vigorously again until it becomes smooth and elastic. Set aside to rise and in the meantime fold the dough three times like an envelope at regular intervals.
- Proceed to shaping the dough. Place them on the counter and gently stretch them. Sprinkle with cinnamon, roll and shape into a ball. Set aside again, covered, for about 20 minutes. After this time, the dough should loosen up a bit, so proceed to forming the loaf. Place it in a baking tin sprinkled with flour and leave for another 1-1.5 hours.
- A well-risen loaf bake at 230 degrees C in a steamed oven for about 40 minutes. Halfway through the baking time, you can reduce the temperature slightly to prevent the bread from browning too much. Once baked, leave it to cool and then serve with your favorite additions. Enjoy your meal!
