Quick soup with meat insert. You'll be full with just one bowl

A quick soup for dinner based on minced meat and vegetables. There are plenty of onions, carrots, peppers, potatoes, garlic, corn and peas. Although the dish is easy and rather quick to prepare, it contains a large dose of nutrients. It’s enough for the entire dinner, because the protein and dietary fiber it contains will keep you full for a long time. Also remember that if you don’t have access to fresh vegetables, you can use frozen ready-made mixtures. The soup is aromatic, delicious and well seasoned. Nothing stops you from preparing a large pot for two days – the next dinner will be even more intense in taste.

Ingredients:

  • 500 g of minced pork,
  • onion,
  • 2 carrots,
  • pepper,
  • 8 medium-sized potatoes,
  • a can of chopped tomatoes,
  • a small can of canned peas,
  • small can of corn,
  • 2-3 cloves of garlic,
  • 1.5 liters of water or broth,
  • 3 teaspoons of tomato paste,
  • a teaspoon of marjoram,
  • a teaspoon of sweet paprika powder,
  • a teaspoon of smoked paprika powder,
  • salt and pepper
  • fat for frying.

How to do it:

1. Start by preparing the vegetables. Chop the onion into cubes. Remove the seeds from the peppers and cut them into thin strips, several centimeters long. Chop the peeled carrots in the same way. Drain the corn and peas from the brine. Peel and crush the garlic cloves. Chop finely.

2. Heat the fat in a pan. Add the onion and garlic and fry gently. Then add minced meatsalt and pepper them. Fry until it is no longer raw. Transfer everything to a medium-sized pot.

3. In the same pan where the meat was fried, fry the peppers and carrots. When they become soft, add the peas and corn. Leave for a few more minutes, stirring occasionally. Also pour the contents of the pan into the pot. If using frozen vegetables, fry them long enough to soften.

4. Pour water or broth and bring to a boil. After this time, reduce the burner power to medium.

5. Peel the potatoes and cut them into medium-sized cubes. Add potatoes to the soupcook for 20 minutes.

6. Now pour the contents of the can of tomatoes into the pot and season sweet and smoked paprika, marjoram, salt and pepper.

7. Cook the soup like this for about 10 minutes. Thicken it with tomato paste.
