Cream of celery is a soup that impresses with its simplicity of preparation and its versatility – perfect for everyday use and as an elegant appetizer at a party. It warms you up and gives you energy on cold days. Preparing such a dish is very easy. First, just fry the onion and celery in butter, which will add more flavor to the entire dish. Then you need to pour the broth and cook until the vegetables are soft. Then blend everything into a smooth cream and whiten with cream. Once properly seasoned, the soup is ready to be served. It comes out really aromatic, velvety and full of flavor.
Ingredients:
- 750 ml chicken broth,
- 50 ml whipping cream,
- 4 stalks of celery,
- small potato,
- onion,
- 3 tablespoons of butter,
- a teaspoon of lemon juice,
- 1/2 teaspoon of salt,
- 1/2 teaspoon of black pepper.
Additionally:
- croutons to serve,
- parmesan for sprinkling,
- olive oil for drizzling.
How to do it:
1. Chop the onion finely. Cut the celery into slices about 1.5 cm thick, and cut the potato into medium cubes.
2. Heat the butter in a large pot. Add onion and celery. Fry the whole thing over medium heat for about 5 minutes until soft, but do not brown.
3. Pour in the broth and add the potatoes. Cover the pot and simmer for about 20 minutes, until the vegetables are soft.
4. Blend the soup with a hand blender until smooth. Pour in the cream and lemon juice, then mix. Season everything to taste with salt and pepper.
5. Simmer the soup for another 2-3 minutes. If you prefer a very smooth and velvety soup, you can additionally strain it through cheesecloth to remove the fibrous pieces of celery. However, this is not necessary.
6. Serve the cream of celery soup warm, drizzle with a teaspoon of olive oil, sprinkle with Parmesan cheese and croutons.
7. Store leftovers in the refrigerator for 2 days. If the soup begins to thicken too much, thin it out a bit with additional broth.
