It is a delicious and healthy vegetable that also tempts with its appearance. So one wonders, why do we rarely eat eggplant? In fact, it is quite rare on tables in Polish homes and it is worth considering the reason.

The first reason may be the characteristic taste of this vegetable (which, interestingly, is actually a fruit, more specifically a variety of berry). Eggplant actually has a slightly bitter taste, this is due to the bitter compounds present in it, such as alkaloids. However, this problem disappears after heat treatment.

It is also impossible not to notice another reason why eggplant is often omitted when composing home menus. Not everyone simply knows how to prepare it to make it tasty. Meanwhile, baked or grilled eggplant is truly a delicacy.

First of all, it is really low in calories, it has only about 25 kcal per 100 g. Moreover, aubergine (this is another word for eggplant) is rich in dietary fiber, thanks to which it regulates intestinal function. In addition, fiber also has a positive effect on stabilizing blood sugar.

Eggplant is also a good source of B vitamins, which protect the nervous system and add energy. In addition, it is also rich in potassium, manganese and iron, which ensures, among others, support for the circulatory system, immunity and fertility.

We must also remember that eggplant contains hydrochloric acid, which has high antioxidant activity. Thanks to this, it protects the body’s cells against damage, which prevents the development of many diseases.

Once you buy the eggplant, what can you make with it in the kitchen? It turns out that it is a truly versatile ingredient that can enrich your daily diet.

It tastes best baked, but other methods of heat treatment will also work great. Grilled, stewed, fried – eggplant is always simply delicious.

If you want a healthy snack, prepare baked eggplant slices – this vegetable seasoned with olive oil, garlic and your favorite spices can be perfect to eat on its own or as an addition to a salad. It will then gain in taste and health benefits.
