Strawberries are fruits that taste best in summer. Although their season is quite short, their delicious aroma can be retained for longer. All you need to do is freeze-dry them. Thanks to this, they retain their color, smell and nutritional value longer, and at the same time become light and crispy. In this form, they can be used in the kitchen at any time of the year – both as a quick snack and as an ingredient in healthy baked goods. This is why freeze-dried strawberries have become so popular among people who care about their health and figure. They can be easily purchased in supermarkets and health food stores. They may not be the cheapest product on the shelves, but they last for a long time.
Freeze-drying is the process of drying fruit at a very low temperature. Water is then removed by sublimation, i.e. the transformation of ice into water vapor, bypassing the liquid state. First, the strawberries are frozen, and then the pressure is released so that the ice turns into steam. Secondary drying takes place so that the water almost completely disappears from the fruit. It sounds scientific, but the result is very simple – we get fruit that looks like miniature, light versions of fresh strawberries. They retain their color, taste and even aroma, but become crispy.

Fresh strawberries contain the most water, as much as 90%. Freeze-dried ones are almost completely devoid of it, so they are light and have a more intense taste. After pouring water, they regain their original structure, which makes them a universal ingredient in the kitchen.
Compared to these fresh freeze-dried strawberries they have a longer shelf life and do not require storage in the refrigerator. Their purchase is therefore a long-term investment – they will be used for many breakfasts and desserts. They are convenient because you can put them in a purse or backpack and take them with you when traveling or as a snack at work.

In the research entitled Dried strawberries as a high nutritional value fruit snackpublished in the Journal of Food Science and Biotechnology (2018), Polish scientists from the Warsaw University of Life Sciences indicated that freeze-dried fruits retain up to 90%. nutritional value of their fresh counterparts. This means that a spoonful of such strawberries can provide a portion of vitamins comparable to fresh fruit – without worrying about seasonality or quick spoilage.
