Frying pancakes is an art that requires some practice, but with a few basic rules anyone can achieve perfection. The key, of course, is the right dough, a well-heated pan and technique. Basic ingredients: milk, flour, eggs, salt and oil. However, it sometimes happens that we do not always have the right amount of each ingredient on hand in our kitchen. This was also the case with me. When I started preparing the pancake batter, it turned out to be too thick and I had no more milk. Then I decided it was time to take a risk and added half a glass of carbonated spring water to the dough. I was positively surprised by the effect, because after frying the pancakes were delicate and fluffy. They literally melted in your mouth. They were so delicious that since then I always add sparkling water to my pancake batter.
Recipe for fluffy pancakes

Ingredients:
- 1 cup of wheat flour
- 1 tablespoon of sugar
- 1 teaspoon of baking powder
- A pinch of salt
- 1 egg
- 1 cup of milk
- 1/2 cup of sparkling water (cold)
- 2 tablespoons melted butter (or oil)
- Oil or butter for frying
Preparation:
- In a large bowl, mix flour, sugar, baking powder and salt.
- In a separate bowl, beat the egg with the milk and melted butter.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Do not mix too long to avoid gluten formation (the dough should have lumps).
- Finally, add cold sparkling water and mix gently.
- Heat the pan over medium heat. Lightly grease the pan with oil or butter.
- Pour portions of dough onto the heated pan (about 1/4 cup for one pancake). Fry the pancakes for about 2-3 minutes on each side until golden and fluffy.
Pancakes can be served according to your preferences: with jam, cheese or chocolate cream.
