Vegetarian cutlets can be quite a challenge. Sometimes it is difficult to find a recipe that will allow us to prepare a meatless dinner that will delight with its structure, taste and ease of preparation. This recipe combines all these features. Check out how to make perfect cutlets without a gram of meat.

If you want to prepare tasty cutlets that do not contain meat, you can use the recipe for chickpea and Chinese cabbage cutlets. It is a great alternative to traditional ground, which is much lighter and less greasy.

In addition, they are rich in protein thanks to the egg and chickpea content. To make them we will need the following ingredients:

  • 1 can of chickpeas,
  • 1 onion,
  • 0.5 bunch of parsley,
  • 350 g Chinese cabbage,
  • 0.5 cup of breadcrumbs,
  • 1 clove of garlic,
  • 1 egg,
  • 1 tablespoon of roasted sunflower seeds,
  • sun,
  • pepper,
  • 0.5 teaspoon of chili powder,
  • canola oil.

With these few ingredients we will prepare a delicious vegetarian dinner that is not only easy to make, but also filling and extremely tasty. It won’t take us much time to prepare it.

To prepare our cutlets, we start by shredding the cabbage and sprinkling it with salt. Set aside for 10-15 minutes. Meanwhile, drain the chickpeas, rinse with water and drain. Then crush it with a fork to leave small, noticeable pieces.

The next step is to chop the parsley and onion finely, as well pressing garlic through a press. Squeeze the cabbage thoroughly and place it in a bowl along with the onion, garlic and chickpeas. Add 3-4 tablespoons of breadcrumbs, roasted sunflower seeds, chili and parsley. Mix everything thoroughly and season with salt and pepper.

Then add the egg and combine it with our mass. If you notice that it is too thin, add more breadcrumbs. After preparing the mass, we form small cutlets and roll them in the remaining breadcrumbs. Fry them in hot oil until they become golden. Transfer them from the pan to a paper towel to remove excess fat. We can serve them e.g groats or salad.
